Chicken Broccoli Fritters
Makes 8 fritters
200 grams COOKED chicken, diced 1/2" cubes
100 grams Broccoli, diced 1/4" pieces
1/2 cup shredded cheese (mozz or cheddar)
1/2 tsp EACH of garlic powder, onion powder, paprika, and Italian seasoning
2 eggs well beaten.
Optional: diced red or green pepper, green onion.
1. Start by dicing the Broccoli and steaming it until fork tender. ( I microwave mine with 3 tbsp water for 4 mins and drain)
2. Line a baking sheet with parchment paper, set aside.
3. Meanwhile, add all other ingredients into a medium bowl. Add in the well drained broccoli and stir everything together so the egg coats everything.
4. Using a 1/2 cup measuring cup, scoop up the mixture and add to baking sheet. After you've added all the 8 scoops, you may need to form the fritters with your fingers so they don't touch.
5. Airfry at 400°F for 10 mins, checking to make sure the egg is completely cooked. (OVEN: 400°F for 15-17 mins.)
6. Remove from airfryer and allow to rest for 5 mins to firm up.
7. EAT!
This can also be made with ham or roast beef instead of chicken.

90 Second GF Chocolate Almond Cake
Desperate for chocolate cake, I created this recipe based on the very familiar sec bread.
1 tablespoon oil
1 egg
1/4 teaspoon vanilla
3 tablespoons ground almonds
1/2 tablespoon baking Powder
2 teaspoon sweetener
1 tablespoon cocoa powder
(Do not add salt)
1. In a microwavable mug or dish, add and beat together the egg, vanilla, and oil.
2. Add the remaining ingredients and mix until a smooth batter.
3. Microwave on high for 90 seconds.
4. Remove from microwave and let stand for 2 minutes before eating.
Top with icing or yogurt and fruit
This makes 1 serving of cake.
